What is up with all this rain? Between the Government Shutdown, gloomy sky and rain DC is a pretty melancholy place today.  At least it is Friday!!  To stick with my fall/apple picking theme from yesterday I took one of the photos I took at the orchard and edited it to be black and white.  I’m really into black and white photography lately.

It’s Throw Back Thursday!!  Fall is officially here, which brings back tons of apple picking memories.  I don’t think you can grow up on the east coast, Massachusetts specifically, and not have gone apple picking as a child.  I’ve been dying to go apple picking someplace in Virginia, but we have been just too busy the last few weekends.  I’m hoping we can squeeze in a trip in the next couple of weekend … but it is certainly not guaranteed.

In the mean time these photos from apple picking with the husband, sister-in-law and brother-in-law will have to surface.  The husband and I were in town visiting when we all decided a field trip was in order.  Into the car we went and drove out to Applewood Orchards to do some apple picking.  Such a fun day!

My sister and I found this recipe for pumpkin bread one fall afternoon when trying to decide what to make that wasn’t chocolate chip cookies. :) Cookies are our go to hang out and watch a movie snack.

We ate nearly a whole loaf in one sitting (or really standing in the kitchen over the loaf of bread) it was THAT good!  It’s now a must have item in our family for Thanksgiving dinner.

Besides the canned pupmpkin most items are staples and you probably already have the ingrediants in your kitchen.

Pumpkin Bread Recipe

Ingredients:

2 cups canned pumpkin (or homemade pumpkin puree)
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon nutmeg
¾ teaspoon ground cloves

Directions:

Pre-heat the oven to 350 degrees.

In a separate bowl sift the flour into a bowl.  On your last cup of flour add the baking soda, baking powder, cinnamon, salt, nutmeg and cloves and sift together.

Combine pumpkin, sugar, water, oil and eggs in a bowl and beat together until mixed well.

Mix the dry ingredients with the wet ingredients slowly and beat until smooth.  Unlike chocolate chip batter this batter does NOT taste good. My sister and I made the mistake of trying the batter and thought the bread was going to be terrible.  But it’s is amazing once it is cooked, promise. So just hold off on any tasting. :)

Grease two 9 x 5 inch loaf pans with Pam or any nonstick spray. For easy clean up I recommend putting tin foil in the bottom of the pans first.  Pour the batter into the 2 loaf pans and try to evenly dividing the batter between the two.

Bake at 350 degrees for 60-70 minutes or until a toothpick comes out clean.  Get ready for your house/apartment to smells OH so YUMMY as the loafs cook! Remove from oven and allow loafs to cool before cutting.

Brrrrr it’s cold out there and today was the first snow fall of the year!!!

Cold weather = chili night at our house and to be specific turkey chili!  My husband swears he’s going to be made of turkey, because of how many turkey based meals I make. LOL. He cracks me up.

Now I’m not saying by any means that I don’t like beef, but in things like chili using turkey or beef doesn’t make a difference to me.  Turkey is lower in fat so I often use it instead of beef.  You can totally use beef if that’s your preference with this recipe.  Either way it will taste great … in my humble opinion. :)

Ingredients:

1.25 pounds ground turkey
1 can chili beans in medium spicy sauce (not drained)
1 can dark red kidney beans (drained)
1 can fire roasted diced tomatoes (with juice)
1 can tomato paste
1 large onion (chopped)
1 red bell peppers (seeded  &  chopped)
⅓ jalapeno pepper (seeded & minced – use less if you don’t like things spicy)
4-6 cloves or 1 tablespoon garlic (minced)
½ cup beer (or substitute in water)
2 tablespoons chili powder
1 tablespoon Worcestershire sauce
½ tablespoon dried oregano
1 teaspoons ground cumin
1 teaspoons hot sauce
1 teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper (or less to taste)
½ teaspoon paprika

Chop the red pepper and drop it into a big enough pot to hold all of chili.   I like to add a little vegetable oil to make the veges soften quicker.  Then chop your jalapeno, garlic and onion and drop those in as well.  Saute until they are tender.

In a pan over medium-high heat ground turkey.  Break into small pieces and cook until browned. Drain off any excess fat.

Once the vegetables are cooked add the turkey (or beef) to the big pot.  Next, add in Worcestershire sauce, hot sauce, and beer (I usually use water and to me it tastes the same).  Then add chili beans (with the sauce), kidney beans, fire roasted tomatoes and tomato paste.

Season with chili powder, oregano, cumin, salt, pepper, cayenne pepper, and paprika. Mix well. Cover and simmer for 1/2 hour stirring occasionally.

Makes 6 servings.  If you have left overs it makes for a fabulous lunch the next day or later in the week!

I served it with homemade corn bread and it was YUMMY!
